Cream together:
5oz/142 gms butter
1 egg
1 cup sugar (I use castor sugar)
1 tablespoon golden syrup
Then add:
2 cups self-raising flour
2 teaspoons ground ginger
1 teaspoon bi-carb soda
Roll into walnut sized balls (I flatten them slightly). Dip tops in sugar. Arrange on greased (I use olive oil) baking trays (sugar side up), leaving room for spreading.
Bake in 180C (I think that is about 350'F) oven for about 20 minutes.
Enjoy, but be warned...they are addictive!!

Hi ladies - we finished the last of the biscuits off with our after church cuppa today :o)
