Wholewheat Apple Muffins

Yesterday I made these delicious muffins...is that why I ate 3??? I got the recipe from a blog, unfortunately I can't find the blog again.

Just as well I saved the recipe :o)




Whole Wheat Apple Muffins

Yield: 12

1 1/4 cup (4 ounces) whole wheat flour
1 cup (4 1/4 ounces) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tsp. vanilla
1 tablespoon cinnamon
1/2 cup (1 stick, 4 ounces) unsalted butter, at room temperature
1/2 cup honey
1/2 cup dark brown sugar, packed, divided
1 large egg, lightly beaten
1 cup buttermilk or yogurt
2 large apples, peeled, cored, and coarsely chopped

Preheat the oven to 450°F. Grease and flour 12 muffin cups and set aside.
Mix together the flours, baking powder, baking soda, salt, cinnamon and set aside.
In a separate bowl, cream the butter, honey, and 1/4 cup of the brown sugar. Beat until fluffy. Add the egg and vanilla and mix well; stop once to scrape the sides and bottom of the bowl. Mix in the buttermilk gently. (If you over-mix, the buttermilk will cause the mixture to curdle.)
Stir in the dry ingredients and fold in the apple chunks.

Divide the batter evenly among the prepared muffin cups, sprinkling the remaining 1/4 cup brown sugar on top. Bake for 10 minutes {on the top rack}, turn the heat down to 400°F, and bake for an additional 5 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.

Notes: I didn't have any buttermilk or yoghurt, so I used skim milk...they were still yummy!!!

Sunday Sermon

This afternoon after church I listened to another a sermon from Willingdon Church in Canada. It was very good: about knowing what we believe (the Gospel) and how to present it to others.

If you are already a christian I would urge you to listen to it as it helps us to know the assurance of our salvation, and if you are not a christian, I urge you to listen to it so you can see the importance of committing your life to God, and the implications if you don't. It goes for about 45 minutes and is a very beneficial and uplifting way to spend a sunday afternoon.

Quilting

Today I bought some fabric to do some quilting.

The top layer will be the patterned fabric, then the batting/wadding, and the plain pink will be the backing. I will hand quilt around each square.

I hope to make some placemats and a table runner.

New man - Jerry Bridges

I didn't get to church this morning due to a headache, so I have been spending the day with my new man - Jerry Bridges - listening to some of his sermons online.

He is a very good preacher and presents the gospel and bible truths in an easy to understand way. I was listening from The Navigators site and I think his audience was college students, but I really enjoyed the basic simplicity of his presentation of the different aspects of bible doctrine.

Today I have been listening to "The Doctrine..." series. I listened to "The Doctrine of God" and "The Doctrine of Christ". I am looking forward to listening to the rest.

I am also reading one of his book - Transforming Grace.

I'm back!!

I've decided to re-open my blog. A few friends have asked where I've gone. So for them, and anyone else who is out there...I'm back!!!

PS - not that wanting attention and people asking after me was my intent in closing...I did need some time away...but I'm feeling up to it now, so will carry on!
